Using environmentally-beneficial disposables

  • Napkins are 100% recycled natural fiber, 65% post consumer waste
  • Plates and serving utensils made from organically grown bamboo
  • Chinet plates and bowls made of 100% recycled materials
  • Cutlery made from birchwood (a natural renewable resource) or biodegradable corn starch
  • Plastic cups and to-go containers are PLA, and hot cups are biodegradable and lined with PLA (a material naturally derived from corn that uses fewer fossil resources to manufacture than conventional plastics)

Conservation efforts in our offices and kitchen include printing and copying on recycled paper; recycling plastic, paper, and glass; cleaning with products that are biodegradable and nontoxic; using reusable containers for beverages and staff meals; using energy efficient light bulbs

Using local products produced naturally and organically by small family farmers, ranchers, and herdsmen whenever possible -- supporting an environmentally sound food system where foods produced locally are consumed locally
